We have a wedding with around 200 people we shish-k-bobs in the context of our food at home, far in advance as we can solve, and what a great way to keep serving them? They are a variety of beef, chicken, pork, vegetables and fruits.

If I were you, I would be as close as possible to the realm of possibility to cook. You do not really prepared in advance and reheated. All the texture you want to lose, especially beef and pork. And the vegetable is also strange.
